Mini Deviled Egg Bites

An interesting twist on deviled eggs using mini bundt cake pan and oven boiling method! Buzzfeed just featured this fun baking method for the eggs, which I paired with my filling recipe. I also detailed how to do back to back batches for entertaining larger groups! I hope you love making this as much as I did!

Prep Time: 30 minutes

What You’ll Need:
​20 Eggs
2 Tbsp Pickle Relish
3 Tbsp Greek Yogurt
3 Tbsp Miracle Whip
​1 1/2 Tbsp Mustard
Salt, Cayenne Pepper to taste
1/2 tsp Garlic Powder
Paprika
1/2 bunch Parsley, finely chopped

Let’s Get Started!

Prep water:
-Bring 12 Cups of water to a boil
-Preheat oven to 325 degrees
-Coat mini bundt cake pan with nonstick cooking spray
-Place on top of wire baking rack in a large roasting pan
-Tear two foil sheets the length of the roasting pan (which will eventually seal in steam)

Eggs:
-Separate Yolk from whites; use a 2 cup measuring glass to hold whites, place yolks directly into mini bundt cake pan as you crack each egg.
-Pour whites into each of 14 open spaces
-There is a larger volume of whites vs yolk so you will only want to use 10 eggs for each pan: 10 yolks and 14 whites in each batch.

Bake and Boil:
-Place filled mini bundt cake pan into roasting pan, (push toward one side to allow room for boiling water to pour in)
-Place one foil sheet over the side of the roasting pan without the gap.
-Carefully pour boiling water into the roasting pan, it should bathe the bottom half of the bundt cake pan to slowly cook the eggs
-Quickly and carefully place second foil sheet over the pan to completely seal in the steam from boiling water; place in oven,
-Bake for 15 minutes
-While baking, separate the next 10 eggs into glass measuring cup, this time placing yolks in a second measuring cup.

To remove/begin second batch:
-Carefully remove roasting pan keeping it level to avoid boiling water spill
-peel up one side of foil and remove bundt pan, REPLACE FOIL to keep steam and heat contained for your next batch
-Take a rubber spatula to pop out the egg whites, place onto a plate, then remove yolks and place into medium mixing bowl
-Re-spray mini bundt cake pan with nonstick spray
-Repeat yolk/white distribution
-QUICKLY peel up foil and place mini bundt baking pan on top of baking rack/boiling water, reseal by crimping over edges of roasting pan.
-Place in oven for 15 minutes

When second batch is complete, take all yolks and mash in a medium sized mixing bowl with a Chopping Tool; once finely ground add Mayo, Yogurt, Mustard, Relish, Salt, Cayenne Pepper, Garlic Powder, blend well.

Pipe mixture (or use Ziplock bag with corner snipped) onto each mini bundt egg white. Top with thin layer of Paprika and chopped parsley.
