...sweetness of raw honey and powdered sugar made for a palette pleasing morning plate of happiness. While allowing cream cheese to warm and soften at room temperature, I gathered eggs, milk, bread, honey, confectioner's sugar and a lemon.
After claiming the zest of one entire lemon (save and put aside), I cut and used a lemon press on one half of the fruit, directly over the bowl of softening cream cheese.
I added a pinch of lemon zest, a few shakes of confectioner's sugar, and a teaspoon of raw honey to the top of the cream cheese. Taking a fork, I pressed and mashed the mixture to help combine. Still not quite smooth, I put it aside to warm up.
Three eggs, a splash of milk, and a few shakes of confectioner's sugar went into the 'batter' for the French Toast. After mixing thoroughly, I warmed approximately 1Tbsp of butter in a frying pan on medium heat.
During the 3-5 minutes of time each side required to cook, I continued to stir the filling mixture until smooth. I like things on the intense side and used both lemon halves, adding the other half of lemon juice.
Filling thins as it warms, apply a thin to medium-thick layer of filling to top of one piece of French Toast. Sandwich with another piece of French Toast on top, then cut in half.
Garnish with powdered/confectioners' sugar and lemon zest. My family loves maple syrup, which to my surprise complemented the zing of the lemon.
I also serve the remaining lemon filling in small stainless steel prep bowls. Serve immediately, had I any on hand I would also have topped with fresh blueberries or raspberries!
What you'll need:
(all organic options preferable)
6 slices Sourdough bread
3 free range chicken eggs
1/4 cup dairy or almond milk
Confectioners' sugar, approximately 3Tbsp
1 tsp raw honey
1 organic lemon
4 oz cream or Neufchatel cheese
Let's get started:
~Take 4 oz of cream or neufchâtel cheese, place in small mixing bowl
~Zest one entire lemon, adding a pinch to the cream cheese bowl
~Using a lemon press, juice on half of lemon over top of cream cheese bowl
~Add 1 tsp honey, a few shakes of confectioners' sugar (approx. 1 tsp) from shaker jar to the cream cheese bowl. Allow to warm after mixing with fork (will be lumpy)
~Whisk three eggs, splash of milk, and approx 1tsp of confectioners' sugar to a new mixing bowl
~Soak sourdough bread slices, two at a time, until evenly coated.
~Warm 1Tbsp butter in frying pan on medium heat, add two slices of coated sourdough bread at a time, flip after approximately 3-5 minutes (golden brown); ~During this time further blend cream cheese mixture. Add lemon juice to taste (will also improve consistency)
~Coat one slice of golden brown French Toast with filling mixture
~Add top slice of French Toast
~Slice in half, garnish with lemon zest and confectioners' sugar
~Serve warm (additionally you may serve with remaining filling mixture in small ramekin or tiny prep bowl)
~Additional tip: fresh berries atop or aside add color and pop of flavor!
